What is Dinkel?
Dinkel (Triticum spelta) is an ancient cereal that should not be confused with common wheat (Triticum aestivum) or oats (Avena sativa). It belongs to the same family but has completely different properties. Think of it like a wheat cousin. This cereal is known in Germany as "Dinkel", in many parts of the world as "Spelt" and in Greece as "Olyra" or "Wild Rose". Dinkel strengthens the body without burdening it.
Dinkel has less gluten than common wheat, making it more digestible.
It has a high content of carbohydrates (reasonable), but it has quite high percentages of protein (15-20%) and fiber (30%). In addition, dinkel contains significant levels of iron, copper, magnesium, manganese, phosphorus, zinc, selenium, potassium, thiamine, niacin, vitamin B6 and folic acid.
It is very helpful in the functioning of the digestive system and in the regulation of blood cholesterol due to its high fiber content. High levels of iron and copper increase blood circulation. Niacin helps regulate hormones, and several of the aforementioned elements help prevent osteoporosis. Thiamine is known to boost the immune system. Finally, because most carbohydrates are fiber, they can be consumed by diabetics.
